
The one thing I knew I could not live without was my good ol’ Mexican casserole. It is a staple for those busy work days with no time to cook. Well, Kristie came through for me! This may have been the first recipe I tried, since my success with this diet seemed to hinge on it, and it hit the spot. This is also a recipe that is great as-is, or leaves room for personal creativity and additional seasonings.
This does extremely well in the freezer, which is great for on-the-go.

CARB ALERT: 7-8 carbs per serving + any sides, such as salad, avocado, sour cream, guacamole etc.
Challenge: finding a good chorizo – it seems to be difficult in the groceries where I am shopping. Otherwise this is a very simple meal.
