Blueberry Muffin-in-a-Mug


A favorite and easy morning go-to is the muffin-in-a-mug, Trim Healthy Mama style.  I prefer mine with a bit of Michigan blueberries dropped in. I also make up the dry ingredients ahead of time, store them in the mini Glad containers, and have them quickly available for a quick grab-n-go:


Dry ingredients for a single serving:

  • 2 1/2 tbs golden flax meal
  • 1 1/2 tbs almond flower
  • 2-4 tsp Truvia or a few shakes of Nunanaturals or a stevia sweetener of your choice
    **you may need to play with the sweetener to get it just right for you.
  • 1/2 tsp aluminum free baking soda

Wet ingredients:

  • 1 egg
  • 1 tbs coconut oil
  • berries of your choice


  • crack 1 egg into a coffee cup and whisk it well
  • add the dry ingredients
  • stir in the coconut oil (it can be solid)
  • add the berries
    **I use frozen and gently fold them in
  • microwave for 1.25
    **microwaves vary so it may be trial and error to find the right timing

Add yogurt! – It can be a little dry alone, but yogurt makes it just right. You can play around with this recipe by adding coconut flakes, nuts, whatever you want.
