Sometimes I want something for breakfast and yet my fickle taste buds are not being very informative. That is when a “No Rules” burrito always works.
The only way to make one of these surprise meals is to open the fridge and start pulling things out. This morning I knew I wanted eggs, so I started scrambling and tossing in whatever I could find, including leftover taco mixture of hamburger and black beans.
By the time all of this (very quick and savory) cooking starts smelling up the house, the taste buds are ready!
Pop the mix into your favorite burrito wrap, add some shaved aged gouda, banana peppers and spices, and you are all set!
This is also really good served with avocado and tomato, if you have those on hand. No two meals are ever the same.
