A Muffin in a Mug Kind of Morning

Snowed in with the county under a snow emergency so naturally, since I couldn’t go to work (this was to be my first day on a new job!), my mind turned to breakfast.

I am the wooden spoon of the 3 spoons and, as the wooden spoon, I am a natural kinda gal, yet I want things simple and quick. This looked like a good morning to figure out what I can do to avoid the pitfall (and waist line downfall!) of the last minute, fast-food drive through that I fell into in 2013.

The Trim Healthy Mama book, which we are using for our guide to all things healthy this year, has a quick and tasty solution.

Muffin in a Mug

Basic ingredients (we chose to go with the cinnamon flavor, which turned out to be perfect!)

Dry ingredients for a single serving:

  • 2 tbs golden flax meal
  • 1 tbs + 1 tsp almond flower
  • 2 tsp cinnamon
  • 1/2 tsp aluminum free baking soda
  • 2-4 tsp Truvia

Wet ingredients:

  • 1 egg
  • 1 tbs coconut oil

Start with the egg (this just did not seem like it could work!)

Then the dry ingredients:

Then whisk it well with a fork (bet my right arm is going to gain some muscle!)

Ok… I am going to nuke mine. I don’t have time for anything slower.

Microwave for 1 minute.

Top it off with a butter/cream cheese icing. Absolutely delicious.

It’s a bit dry, so you need something. I am thinking in the future of all sorts of combos!  Like butter, yogurt, squirt of lemon, berries etc. or I could see a Mexico style with some salsa, chocolate with some milk or cream, etc. I believe this is something I could partially assemble before the week starts, thus allowing me to keep my mad dash out the door, only this time with a quick stop for breakfast!
